Patjuk || Red Bean Porridge, 红豆粥, 紅豆粥, 小豆粥, 팥죽 1

Red bean porridge is a traditional Korean dish, often enjoyed during the winter solstice. It’s made with red beans, rice, and sweet rice flour dumplings.

Ingredients:

  • Red beans: 2 cups
  • Rice: 1 cup
  • Water: 10 cups
  • Sweet rice flour: 1/2 cup
  • Warm water: 1.5 tbsp
  • Salt

Instructions:

  1. Cook the red beans: Soak the red beans in water overnight. Rinse them well and cook them in plenty of water until they are soft. Strain the beans, reserving the cooking liquid.
  2. Make the dumplings: Soak the rice in water. Combine sweet rice flour with warm water to form a dough, then shape it into small balls about 2cm in diameter. Cook the dumplings in boiling water until they float, then drain and rinse with cold water.
  3. Cook the porridge: Combine the cooked red beans, reserved cooking liquid, and soaked rice in a pot. Cook until the rice is soft and the porridge has thickened.
  4. Add dumplings and season: Add the cooked dumplings to the porridge and season with salt to taste. Simmer over low heat until the flavors have combined.

Note:

  • Soaking: Soaking the red beans and rice beforehand helps to reduce cooking time and improves the texture of the porridge.
  • Sweetness: Traditionally, red bean porridge is slightly sweet. If you prefer a sweeter porridge, you can add a bit of sugar or honey to taste.
  • Serving: Red bean porridge is often served hot, topped with additional toppings like toasted sesame seeds or pine nuts.
