By frying the cooked noodles in oil heated to 150°C, the moisture content can be reduced to less than 10%, preventing the growth of microorganisms. Companies like Nongshim manage to reduce the moisture content of their fried noodles to less than 7%, allowing for long-term storage without the need for preservatives.
