How to Make Jeolpyeon:

  1. Grind the rice: Grind 1 deok of glutinous rice with a small amount of salt in a grinder.
  2. Grind the mugwort: Steam the mugwort and then grind it with a small amount of water in the grinder.
  3. Steam the rice: Steam both the plain rice and the mugwort rice separately.
  4. Refine the texture: Attach the fine-mesh nozzle to the grinder. Add a small amount of water to the steamed plain rice and grind it again. Repeat with the steamed mugwort rice.
  5. Combine and shape: Combine the ground rice and mugwort rice and knead until smooth and elastic. Shape the dough into rectangular pieces, cut them to your desired size, and brush with sesame oil.

Additional tips:

  • To create a more vibrant green color, you can add a small amount of food coloring to the mugwort rice.
  • For a sweeter flavor, you can add a small amount of sugar to the dough.
  • Jeolpyeon can be steamed, grilled, or pan-fried.
