Gochujang Jjigae is a popular Korean stew that’s both comforting and flavorful. It’s characterized by its bold, spicy flavor, thanks to the generous use of gochujang (Korean red pepper paste).
Ingredients:
- Pork belly, sliced
- Zucchini, sliced
- Onion, sliced
- Garlic, minced
- Gochujang (Korean red pepper paste)
- Gochugaru (Korean red pepper flakes)
- Soy sauce
- Sugar
- Water or dashi stock
- Green onions, for garnish
Instructions:
- Sauté the pork:
- In a pot, heat a little oil and sauté the pork belly until browned.
- Add the vegetables:
- Add the zucchini, onion, and garlic to the pot and sauté until softened.
- Make the sauce:
- In a small bowl, combine gochujang, gochugaru, soy sauce, and sugar.
- Combine and simmer:
- Pour the sauce over the vegetables and pork.
- Add enough water or dashi stock to cover the ingredients.
- Bring to a boil, then reduce heat and simmer until the flavors are well-combined and the vegetables are tender.
- Serve:
- Garnish with chopped green onions and serve hot with a bowl of rice.
Tips:
- For a spicier stew, add more gochujang and gochugaru.
- You can adjust the thickness of the sauce by adding more or less water.
- If you don’t have pork belly, you can use other types of meat, such as beef or tofu.
- You can also add other vegetables, such as mushrooms or potatoes, to the stew.
