Gochujangjjigae || Red Chilli Paste Stew, 辣椒酱锅, 辣椒醬鍋, コチュジャンチゲ, 고추장찌개 1

Gochujang Jjigae is a popular Korean stew that’s both comforting and flavorful. It’s characterized by its bold, spicy flavor, thanks to the generous use of gochujang (Korean red pepper paste).

Ingredients:

  • Pork belly, sliced
  • Zucchini, sliced
  • Onion, sliced
  • Garlic, minced
  • Gochujang (Korean red pepper paste)
  • Gochugaru (Korean red pepper flakes)
  • Soy sauce
  • Sugar
  • Water or dashi stock
  • Green onions, for garnish

Instructions:

  1. Sauté the pork:
    • In a pot, heat a little oil and sauté the pork belly until browned.
  2. Add the vegetables:
    • Add the zucchini, onion, and garlic to the pot and sauté until softened.
  3. Make the sauce:
    • In a small bowl, combine gochujang, gochugaru, soy sauce, and sugar.
  4. Combine and simmer:
    • Pour the sauce over the vegetables and pork.
    • Add enough water or dashi stock to cover the ingredients.
    • Bring to a boil, then reduce heat and simmer until the flavors are well-combined and the vegetables are tender.
  5. Serve:
    • Garnish with chopped green onions and serve hot with a bowl of rice.

Tips:

  • For a spicier stew, add more gochujang and gochugaru.
  • You can adjust the thickness of the sauce by adding more or less water.
  • If you don’t have pork belly, you can use other types of meat, such as beef or tofu.
  • You can also add other vegetables, such as mushrooms or potatoes, to the stew.
