Deulkkaekalguksu is a popular Korean noodle soup known for its rich, creamy broth made from sesame seeds. It’s a comforting and flavorful dish that’s perfect for a cold day.

Ingredients:

For the Broth:

  • Sesame seeds
  • Water
  • Soy sauce
  • Salt
  • Garlic, minced
  • Red pepper flakes (optional)

For the Noodles:

  • Kalguksu noodles (Korean knife-cut noodles)

For the Toppings:

  • Zucchini, sliced
  • Mushrooms, sliced
  • Green onions, chopped

Instructions:

  1. Make the Sesame Seed Broth:
    • Toast sesame seeds in a dry skillet until fragrant.
    • Grind the toasted sesame seeds into a fine powder.
    • Boil water in a pot and add the sesame seed powder, soy sauce, salt, garlic, and red pepper flakes.
    • Bring to a boil, then reduce heat and simmer.
  2. Cook the Noodles:
    • Cook the kalguksu noodles in boiling water until tender. Drain.
  3. Assemble the Soup:
    • Add the cooked noodles to the sesame seed broth.
    • Add the zucchini and mushrooms to the soup and cook until tender.
    • Garnish with chopped green onions.

Tips:

  • For a richer flavor, you can add a spoonful of doenjang (fermented soybean paste) to the broth.
  • Adjust the spice level by adding more or less red pepper flakes.
  • You can also add other vegetables like spinach or carrots to the soup.
