Deodeokgui || Grilled Deodeok, 烤沙参, 烤沙蔘, 蔓人蔘焼き, 더덕구이 2

Deodeokgui, or Grilled Deodeok, is a popular Korean dish that showcases the unique flavor and texture of deodeok, a type of mountain vegetable. It’s often enjoyed as a side dish or appetizer.

Ingredients:

  • 300g deodeok (Korean mountain bellflower)
  • For the marinade:
    • 1 tablespoon soy sauce
    • 2 tablespoons sesame oil
  • For the gochujang sauce:
    • 3 tablespoons gochujang (Korean red pepper paste)
    • 1 tablespoon sugar
    • 2 tablespoons green onion, chopped
    • 1 tablespoon minced garlic
    • 1 tablespoon sesame seeds

Instructions:

  1. Prepare the deodeok:
    • Peel the deodeok and soak it in water to remove any bitterness.
    • Cut the deodeok in half lengthwise and flatten it by gently pounding with a meat mallet.
  2. Marinate the deodeok:
    • Mix the soy sauce and sesame oil to make the marinade.
    • Brush the marinade evenly over the flattened deodeok.
  3. Grill the deodeok:
    • Grill the marinated deodeok over medium heat until slightly cooked.
  4. Apply gochujang sauce:
    • Mix all the ingredients for the gochujang sauce.
    • Brush the gochujang sauce generously over the partially grilled deodeok.
  5. Finish grilling:
    • Continue grilling over medium heat until the sauce is caramelized and the deodeok is tender.

Tips:

  • For a spicier flavor, add more gochujang or a pinch of red pepper flakes to the sauce.
  • To enhance the sweetness, you can add a bit of honey or fruit juice to the sauce.
  • Serve the grilled deodeok as a side dish or as part of a Korean barbecue.
