  • 1 kg radishes
  • 1 cup coarse salt
  • 100g chives
  • 100g radish greens

  • 1/2 cup fish sauce
  • 3 tablespoons liquid fish sauce
  • 1/2 cup cooked rice starch
  • 1 tablespoon sugar
  • Salt to taste

Instructions:

  1. Prepare the radishes: Choose firm, fresh radishes with green leaves. Wash them thoroughly and salt them.
  2. Prepare the greens: Wash the chives and radish greens, and salt them lightly. Mince the garlic and ginger.
  3. Make the seasoning: Combine fish sauce, liquid fish sauce, red pepper powder, sugar, and cooked rice starch.
  4. Mix everything: Drain the salted radishes, chives, and radish greens. Mix them with the prepared seasoning. Adjust the taste with salt and sugar.
  5. Pack and ferment: Tie the kimchi into bundles and pack them tightly into a jar. Allow to ferment.

Note: The fermentation time can vary depending on the temperature and desired level of sourness.
