Chogyeguksu is a refreshing Korean dish perfect for hot summer days. It’s a cold noodle soup made with a tangy, slightly sweet broth and topped with shredded chicken.

Ingredients:

  • Noodles: Buckwheat noodles or wheat flour noodles
  • Chicken broth: Made from a boiled chicken carcass or store-bought chicken broth
  • Chicken: Shredded cooked chicken
  • Cucumber: Sliced
  • Radish: Pickled radish, sliced
  • Vinegar
  • Soy sauce
  • Mustard
  • Sugar
  • Sesame seeds
  • Green onions

Instructions:

  1. Cook the noodles: Cook the noodles according to package instructions and rinse with cold water to cool them down.
  2. Prepare the broth: Combine chicken broth, vinegar, soy sauce, mustard, and sugar in a bowl. Adjust the seasoning to your taste. Chill the broth.
  3. Assemble the dish: In a bowl, arrange the cooked noodles. Top with shredded chicken, cucumber, and pickled radish. Pour the chilled broth over the noodles and garnish with sesame seeds and green onions.
