Chamchi-kimchi-jjigae is a hearty Korean stew made with kimchi, tuna, and other vegetables. It’s a popular comfort food known for its spicy and savory flavors.

Ingredients:

  • 1 pound kimchi, rinsed and chopped
  • 1 can tuna, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon gochujang (Korean red pepper paste)
  • 1 teaspoon sugar
  • 1 teaspoon soy sauce
  • 2 cups water or chicken broth
  • 1 tablespoon sesame oil (optional)
  • 1 scallion, chopped for garnish

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onions and garlic, and sauté until fragrant, about 2 minutes.
  2. Add the kimchi and gochujang, and stir-fry for 2-3 minutes until slightly wilted.
  3. Add the tuna, sugar, and soy sauce, and stir to combine.
  4. Pour in the water or broth, bring to a boil, then reduce heat to low and simmer for 10-15 minutes, or until the flavors have blended.
  5. Adjust the seasoning with salt and pepper to taste.
  6. Serve hot, garnished with scallions and a drizzle of sesame oil.

Tips:

  • For a spicier stew, add more gochujang.
  • If you don’t have gochujang, you can use chili flakes or red pepper powder.
  • You can also add other vegetables to the stew, such as tofu, mushrooms, or carrots.
  • This dish is best served with a bowl of steamed rice.

  1. 냄비에 기름을 두르고 신김치와 마늘을 볶다 육수를 넣고 김치가 무르면 통조림 참치와 두부, 대파, 고추, 고춧가루 등을 넣어 마무리 한다. 통조림 참치는 기름을 빼고 넣어야 맛이 깔끔하다.

  2. 锅中倒入适量的食用油,放入酸辛奇和辣椒翻炒一会儿后倒入高汤熬煮,煮至辛奇熟后,放入罐头装金枪鱼和豆腐、从、辣椒、辣椒粉等材料一起熬煮即可。罐头装金枪鱼要先滤油,味道才更加清淡鲜美。

  3. 油をひいた鍋で熟成した酸味の強いキムチとにんにくを炒め、そこへスープを加える。キムチが柔らかく煮えたらツナ缶と豆腐、長ねぎ、唐辛子、粉唐辛子などを入れる。ツナ缶は油切りして入れるとさっぱりとした味になる。

  5. 鍋裡倒點油炒酸辛奇與大蒜,再放入高湯煮開,等辛奇變軟後放入金槍魚罐頭、豆腐、大蔥、辣椒、辣椒粉等。金槍魚罐頭需要先濾油後再放,這樣喝起來口感會更好。
