Baechudoenjangguk is a classic Korean soybean paste soup featuring cabbage. It’s a simple yet comforting dish that’s perfect for a cold day.

Ingredients:

  • Napa cabbage: 500g
  • Water: 1.5L
  • Dried anchovies: 10
  • Dried kelp: 2 sheets
  • Soybean paste (doenjang): 2 tablespoons
  • Red pepper flakes: 1/3 tablespoon
  • Minced garlic: 1/2 tablespoon
  • Green onion: 1
  • Tofu: 1/2 block

Instructions:

  1. Make a broth by boiling water with dried anchovies and kelp.
  2. Remove the anchovies and kelp, then add the chopped napa cabbage.
  3. Dissolve the soybean paste in the broth and add red pepper flakes and minced garlic to taste.
  4. Add tofu and green onion and cook for about 5 minutes.

Tips:

  • Adjust the amount of soybean paste and water according to your taste.
  • For a spicier soup, add more red pepper flakes.
  • You can add other vegetables like zucchini, onion, or mushrooms for a more flavorful soup.
