Instructions:
- Prepare the vegetables: Clean and cut the vegetables into bite-sized pieces. Trim the bean sprouts.
- Prepare the seafood: Clean the monkfish and cut it into serving pieces. Clean the littleneck clams.
- Assemble the stew: Layer the vegetables in a large pot, followed by the monkfish and clams. Pour in the dashi broth.
- Make the gochujang paste: In a separate bowl, combine the dashi broth, gochugaru, cooking wine, minced garlic, green onion, ginger juice, and sesame seeds.
- Simmer: Bring the stew to a boil, then reduce heat and simmer until the monkfish is cooked through.
- Season: Add the gochujang paste to the stew and adjust the seasoning with salt and soy sauce to taste.
- Finish: Add the green onion and watercress, and simmer for a few more minutes until the vegetables are tender.
- Serve: Serve the stew hot.
