Ingredients:

  • Taro root, peeled and cut into chunks
  • Beef bones or beef short ribs
  • Water
  • Soy sauce
  • Salt
  • Garlic, minced
  • Green onion, chopped

Instructions:

  1. Prepare the broth: Boil the beef bones or short ribs in a large pot of water until the meat is tender. Skim off any foam that rises to the surface.
  2. Add the taro: Add the cut taro root to the boiling broth. Simmer until the taro is tender.
  3. Season the soup: Season the soup with soy sauce, salt, garlic, and green onions.
  4. Serve: Serve the soup hot with rice.

Tips:

  • Taro preparation: To prevent irritation, wear gloves when handling raw taro.
  • Broth: For a richer flavor, you can add other vegetables like carrots, onions, or mushrooms to the broth.
  • Seasoning: Adjust the seasoning to your taste. You can add red pepper flakes for a spicy kick.
