Samsun Jjamppong is a popular Korean-Chinese dish known for its spicy, flavorful broth and abundant seafood. The name “Samsun” refers to the three precious ingredients: abalone, sea cucumber, and shark fin. However, modern versions often include a variety of seafood, such as shrimp, squid, and clams.

Ingredients (Serves 4)

  • Noodles: 400g
  • Pork: 100g
  • Carrot: 1/2
  • Shiitake mushrooms: 2
  • Onion: 1
  • Chives: 50g
  • Bean sprouts: 50g
  • Squid: 1
  • Mussels: as needed
  • Clams: 100g
  • Green onion: 1/2
  • Garlic: 3 cloves
  • Broth: 4 cups
  • Red pepper powder: 3 tablespoons
  • Sesame oil
  • Salt
  • Pepper
  • Cooking oil

Preparation

  1. Prepare the Meat and Vegetables:
    • Slightly freeze the pork, then slice it into 5cm long strips.
    • Cut the onion and carrot into thin strips, similar in length to the pork.
    • Soak shiitake mushrooms in water, remove stems, and slice.
    • Wash and cut chives into 5cm lengths.
    • Wash bean sprouts thoroughly.
  2. Prepare the Seafood:
    • Clean mussels and clams with salted water.
    • Clean squid, cut diagonally into bite-sized pieces.
  3. Prepare Aromatics:
    • Mince green onion and garlic.

Cooking Instructions

  1. Sauté:
    • Heat cooking oil in a pan.
    • Sauté garlic and green onion until fragrant.
    • Add pork, then onions, carrots, shiitake mushrooms, squid, clams, mussels, and finally bean sprouts. Cook until vegetables are tender and seafood is cooked through.
  2. Make the Broth:
    • In a separate pot, bring broth to a boil.
    • Add red pepper powder, salt, and pepper to taste.
  3. Combine and Serve:
    • Cook noodles according to package instructions.
    • Add cooked noodles to bowls.
    • Ladle the broth and sautéed ingredients over the noodles.
    • Garnish with chives and sesame oil.
