  3. Assemble the dumplings: Place a small spoonful of filling in the center of each wrapper. Brush the edges with water, fold in half, and press to seal.
  4. Boil the dumplings: Bring a large pot of water to a boil. Add the dumplings and cook until they float to the surface. Reduce heat and simmer for 5 minutes more.
  5. Serve: Serve immediately with a drizzle of sesame oil. A dipping sauce made with chili oil, soy sauce, and vinegar is a popular accompaniment.

Tips for making the filling:

  • Filling variations: You can use a variety of ingredients for the filling, such as beef, chicken, cabbage, bean sprouts, onion, cucumber, tofu, and glass noodles. A common combination is a mixture of ground beef and pork.
  • Moisture control: If using ingredients that release a lot of moisture, such as cabbage or mushrooms, sauté them beforehand to remove excess moisture. This will prevent the dumplings from bursting while cooking.
