Makguksu || Buckwheat Noodles, 荞麦凉面, 蕎麥涼麵, 混ぜそば, 막국수 2

Makguksu is a popular Korean noodle dish made with buckwheat flour. It’s often served cold, with a refreshing broth or spicy sauce.

Ingredients (serves 4):

  • 400g buckwheat noodles
  • 1/2 Napa cabbage kimchi
  • 1/2 daikon radish from kimchi
  • 1 cucumber
  • 1 green onion
  • 100g beef
  • 4 cloves garlic
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • Salt to taste
  • Clear soy sauce to taste

Preparation:

  1. Cook the beef: Boil the beef in plenty of water until tender.
  2. Prepare vegetables and kimchi: Roughly chop the kimchi. Thinly slice the daikon radish. Slice the cucumber into thin, diagonal slices and sprinkle with salt. Mince the green onion and garlic.
  3. Season the ingredients: Slice the cooked beef thinly. Combine the daikon radish with minced green onion, garlic, sesame oil, and sesame seeds. Season the cucumber with the same mixture. Season the beef with the same mixture.
  4. Cook the noodles: Cook the buckwheat noodles until tender and rinse with cold water.
  5. Serve: Divide the noodles into bowls. Top with the prepared kimchi, daikon radish, cucumber, and beef. Pour the chilled beef broth over the toppings.
