Maesilcha or green plum tea, is a refreshing and healthy Korean beverage. It’s made from maesil (green plums) that are soaked in a mixture of sugar, water, and sometimes rice wine. This process extracts the plums’ natural sweetness and beneficial compounds.

How to Make Maesilcha:

Ingredients:

  • Green plums   
  • Sugar
  • Water
  • Rice wine (optional)

Instructions:

  1. Prepare the plums: Wash the green plums thoroughly and remove the stems.
  2. Soak the plums: Place the plums in a sterilized jar and cover them with a mixture of sugar and water. You can add rice wine for extra flavor and preservation.
  3. Let it ferment: Seal the jar and let it sit in a cool, dark place for at least a month. The longer you let it ferment, the more flavorful the syrup will become.
  4. Strain the syrup: Strain the syrup to remove the plums.
  5. Make the tea: Dilute the syrup with hot or cold water to taste.
