Ingredients:

  • Kimchi, chopped
  • Pork belly, sliced
  • Onion, sliced
  • Garlic, minced
  • Gochugaru (Korean red pepper flakes)
  • Soy sauce
  • Sugar
  • Water or dashi stock
  • Green onions, for garnish

Instructions:

  1. Sauté the pork:
    • In a pot, heat a little oil and sauté the pork belly until browned.
  2. Add the kimchi:
    • Add the chopped kimchi and its juice to the pot.
  3. Season the stew:
    • Add gochugaru, soy sauce, and sugar to taste.
  4. Simmer:
    • Pour in enough water or dashi stock to cover the ingredients.
    • Bring to a boil, then reduce heat and simmer until the flavors are well-combined and the kimchi is softened.
  5. Serve:
    • Garnish with chopped green onions and serve hot with a bowl of rice.

Tips:

  • For a spicier stew, add more gochugaru.
  • If you don’t have pork belly, you can use other types of meat, such as tofu or spam.
  • You can adjust the thickness of the stew by adding more or less water.
  • Serve with a side dish of rice and other Korean side dishes for a complete meal.
