Jokbal || Braised Pigs’ Feet, Braised Pig’s Trotters, 酱猪蹄, 豬腳, 豚足, 족발 2

Jokbal is a Korean dish consisting of pig’s trotters cooked with soy sauce and spices. It is usually braised in a combination of soy sauce, ginger, garlic, and rice wine. Additional ingredients used can include onion, leeks, garlic, cinnamon, and black pepper.

Ingredients:

  • Pig’s trotters
  • Soy sauce
  • Rice wine
  • Garlic
  • Ginger
  • Green onions
  • Bay leaves
  • Black peppercorns
  • Water

Instructions:

  1. Prepare the pig’s trotters: Clean the pig’s trotters thoroughly and score the skin to allow the marinade to penetrate.
  2. Marinate: Combine soy sauce, rice wine, garlic, ginger, green onions, bay leaves, and black peppercorns in a large pot. Add the pig’s trotters and enough water to cover them.
  3. Braise: Bring the pot to a boil, then reduce heat and simmer for several hours, or until the meat is tender and the skin is gelatinous.
  4. Serve: Serve hot with a variety of side dishes, such as kimchi, pickled radish, and fresh vegetables.

Tips:

  • For a richer flavor, consider adding other ingredients like dried chili peppers or star anise to the marinade.
  • To enhance the texture of the skin, you can briefly flash-fry the pig’s trotters before braising.
  • Jokbal is often served with a dipping sauce made with soy sauce, vinegar, and chili peppers.
