Jatjuk is a luxurious Korean porridge made with ground pine nuts. It’s a rich, creamy, and nutty porridge, often served during special occasions or as a health tonic.

Ingredients:

• 1 cup short-grain rice
• 6 cups water
• 1/2 cup pine nuts, ground
• 1/4 teaspoon salt
• Honey or sugar (optional)

Instructions:

1. Soak the Rice:
   • Rinse the rice thoroughly and soak it in water for at least 30 minutes.
2. Cook the Rice:
   • Drain the soaked rice and add it to a pot with 6 cups of water.
   • Bring to a boil over high heat, then reduce heat to low and simmer for 30-40 minutes, or until the rice is soft and creamy. Stir occasionally to prevent sticking.
3. Add the Pine Nuts:
   • Gradually add the ground pine nuts to the cooked rice porridge, stirring constantly.
   • Continue to simmer for another 5-10 minutes, or until the porridge reaches your desired consistency.
4. Season and Serve:
   • Add salt, honey, or sugar to taste.
   • Serve the hot porridge in bowls.

Tips:

• Toasting the Pine Nuts: Toasting the pine nuts before grinding them can enhance their flavor. Toast them in a dry skillet over medium heat, stirring constantly, until they are fragrant and slightly browned.
• Grinding the Pine Nuts: You can use a mortar and pestle or a spice grinder to grind the pine nuts into a fine powder.
• Sweetness: Adjust the sweetness to your liking. You can add more honey or sugar if you prefer a sweeter porridge.
