Gyeopi-cha || Cinnamon Tea, 계피차 1

Gyeopi-cha is a popular Korean beverage known for its warm and comforting flavor. Often enjoyed during the cold winter months, it’s believed to help warm the body and aid digestion. With a variety of health benefits, cinnamon tea has gained significant popularity among people of all ages.

Ingredients:

  • 30 grams cinnamon sticks
  • 20 grams ginger, peeled and sliced
  • 5 black peppercorns
  • 6 cups water
  • 1/3 cup brown sugar
  • Pine nuts, for garnish

Instructions:

  1. Prep work: Rinse the cinnamon sticks under cold water and break them into smaller pieces. Peel the ginger and slice it thinly.
  2. Simmer: Add the cinnamon, ginger, and black peppercorns to a pot. Pour in 6 cups of water and bring to a gentle simmer over low heat. Allow the flavors to infuse for at least 20-30 minutes.
  3. Sweeten and serve: Strain the tea into a pitcher to remove the solids. Add brown sugar to taste and stir until dissolved. Pour into mugs and garnish with pine nuts.

Tips:

  • For a stronger flavor, increase the amount of cinnamon or ginger.
  • You can adjust the sweetness to your preference by adding more or less brown sugar.
  • For a smoother texture, strain the tea through a fine-mesh sieve.
  • To make a larger batch, simply multiply the ingredients.
