Gullin Mandu are delightful Korean dumplings that offer a unique twist on the traditional mandu. Instead of being wrapped in dough, these dumplings are simply formed by rolling balls of savory filling in flour. This results in a hearty and rustic treat. The fillings can be as diverse as your imagination allows, from classic combinations of pork and kimchi to vegetarian options like tofu and vegetables. Their versatility makes them a favorite among many, and their simplicity makes them a joy to prepare.
Ingredients (serves 4):
- For the broth: 200g beef brisket, 2 tablespoons light soy sauce
- For the filling: 200g ground pork, 200g bean sprouts, 1 block tofu, 1 cup flour, 1/2 napa cabbage kimchi, a few dried red peppers, 2 eggs, 1/2 green onion
- For seasoning: 1/2 green onion, 2 cloves garlic, 1/2 tablespoon sesame seeds, 1/2 tablespoon sesame oil, salt, pepper to taste
Preparation:
- Prepare the broth: Boil the beef brisket until tender. Shred the meat and return it to the broth. Season with light soy sauce.
- Prepare the filling: Blanch and chop the bean sprouts. Crumble the tofu. Chop the kimchi. Slice the green onion. Beat one egg with salt. Mince the green onion and garlic for seasoning.
- Mix the filling: Combine the ground pork, bean sprouts, tofu, kimchi, and seasonings. Add the beaten egg and mix well.
- Form the dumplings: Shape the filling into small balls. Coat each ball in flour, then dip in cold water. Repeat 2-3 times.
Cooking:
- Cook the dumplings: Add the coated dumplings to the boiling broth. Once they float, add the remaining beaten egg and sliced green onion. Cook until done.
- Serve: Ladle the soup into bowls and garnish with dried red peppers.
Notes on garnishes:
- Traditional Korean garnishes: Traditionally, Korean dishes aim for a balance of five colors: yellow, white, red, green, and black.
- Egg: Yellow and white come from eggs. You can make thin omelets, cut them into strips or diamonds, and use them as garnish.
- Black: Black can be achieved with ingredients like dried shiitake mushrooms or cloud ear fungus.
- Green: Green vegetables like spinach, cucumber, or green onion can be thinly sliced and used as garnish.
- Red: Red peppers, gochugaru (Korean red pepper flakes), or pine nuts can be used for a pop of color.
