Ingredients:

Instructions:

  1. Prepare the Sweet Potatoes:
    • Peel and cut the sweet potatoes into bite-sized chunks.
    • Soak the cut sweet potatoes in water to prevent oxidation.
  2. Deep-Fry the Sweet Potatoes:
    • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
    • Carefully add the sweet potato chunks to the hot oil and fry until golden brown and crispy.
    • Remove the fried sweet potatoes and drain on paper towels.
  3. Make the Sugar Glaze:
    • In a large skillet, melt granulated sugar over medium heat until it turns into a golden brown caramel.
    • Be careful not to burn the sugar.
  4. Coat the Sweet Potatoes:
    • Add the fried sweet potatoes to the caramel and coat them evenly.
    • Toss the sweet potatoes in the caramel until they are well-coated.
  5. Serve:
    • Sprinkle with sesame seeds, if desired.
    • Serve the sweet potatoes immediately while they are still warm and crispy.

Tips:

  • For a sweeter glaze, add a bit of honey or corn syrup to the sugar.
  • To prevent the sugar from crystallizing, add a small amount of water to the skillet before adding the sweet potatoes.
  • You can also use a microwave to cook the sweet potatoes before frying for a faster and easier method.
