Gaji Bokkeum is a popular Korean side dish featuring stir-fried eggplant. It’s a simple yet delicious dish that’s perfect for any meal.

Ingredients:

  • 1 large eggplant
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine or mirin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/4 teaspoon sesame oil
  • Pinch of salt
  • Sesame seeds, for garnish

Instructions:

  1. Prepare the Eggplant:
    • Cut the eggplant into 1-inch cubes.
    • Sprinkle salt over the eggplant and let it sit for 15-20 minutes to draw out excess moisture.
    • Rinse the eggplant and pat dry with paper towels.
  2. Stir-Fry the Eggplant:
    • Heat a large skillet over medium-high heat. Add a little oil and add the eggplant.
    • Stir-fry until the eggplant is tender and slightly browned.
  3. Add the Sauce:
    • Combine soy sauce, rice wine, garlic, red pepper flakes, and sesame oil in a small bowl.
    • Pour the sauce over the eggplant and stir to coat.
  4. Serve:
    • Garnish with sesame seeds and serve hot.

Tips:

  • For a spicier dish, add more red pepper flakes.
  • You can also add other vegetables, such as bell peppers or onions, to the dish.
  • Serve with rice and other Korean side dishes.
