Dwaeji-galbi-gui is a popular Korean dish featuring grilled marinated pork ribs. It’s a beloved choice for a satisfying meal, often enjoyed with family and friends at a Korean barbecue restaurant or at home.

Ingredients:

  • Pork ribs: 1.2kg
  • Soy sauce: 6 tbsp
  • Green onion: 3 tbsp
  • Garlic: 2 tbsp
  • Ginger juice: 3 tbsp
  • Onion juice: 5 tbsp
  • Sugar: 2 tbsp
  • Rice wine: 2 tbsp
  • Black pepper: 1/2 tsp
  • Sesame seeds: 1 tbsp
  • Sesame oil: 1 tbsp

For the side dish (Ssam):

  • Lettuce, chicory, green chili peppers, garlic, ssamjang (Korean chili paste), sesame oil

Instructions:

  1. Prepare the pork ribs: Cut the pork ribs into 6cm pieces and soak them in cold water to remove any blood. Trim off any excess fat and make shallow cuts into the meat.
  2. Make the marinade: In a bowl, combine soy sauce, green onion, garlic, ginger juice, onion juice, sugar, rice wine, black pepper, sesame seeds, and sesame oil.
  3. Marinate the ribs: Pour the marinade over the pork ribs and let them marinate for about 30 minutes, turning them over halfway through.
  4. Grill the ribs: Pour a small amount of water into a grilling pan and place it over heat. Once the pan is hot, add the marinated ribs and cover.
  5. Cook: Cook the ribs until they are tender and browned on both sides. Serve immediately with lettuce, chicory, green chili peppers, garlic, ssamjang, and sesame oil.

Note:

  • Ssamjang: Ssamjang is a Korean chili paste often used for wrapping grilled meats. It’s made with fermented soybean paste, red pepper paste, and other seasonings.
  • Grilling: You can use a variety of grilling methods, including a charcoal grill, gas grill, or even a stovetop grill.
  • Serving: Traditionally, Korean grilled pork ribs are served with various vegetables wrapped in lettuce leaves, along with ssamjang and sesame oil.
