Danhobaksikhye is a delightful Korean drink made with pumpkin and malt. It’s a refreshing and healthy beverage, perfect for any season.

Ingredients:

  • 1 small pumpkin (about 1.5 lbs)
  • 1 cup cooked rice
  • 1 cup malt powder (nuruk 가루)
  • 4 cups water
  • Sugar to taste

Instructions:

  1. Prepare the Pumpkin:
    • Cut the pumpkin into chunks, remove the seeds, and peel the skin.
    • Steam the pumpkin until it’s soft and tender.
    • Mash the steamed pumpkin into a smooth puree.
  2. Make the Malt Water:
    • Mix the malt powder with 4 cups of water.
    • Let it sit for about 30 minutes, then strain the liquid.
  3. Combine Ingredients:
    • In a large pot, combine the pumpkin puree, cooked rice, and malt water.
    • Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes, or until the flavors are well combined.
  4. Sweeten and Serve:
    • Add sugar to taste.
    • Let the drink cool completely before serving.
    • You can serve it chilled or warm.

Tips:

  • For a richer flavor, you can add a pinch of cinnamon or ginger to the drink.
  • You can adjust the sweetness to your preference.
  • If you don’t have malt powder, you can use malt extract or a malt drink.
  • Danhobaksikhye can be stored in the refrigerator for a few days.
