Dakgangjeong is a beloved Korean dish that combines the crispy texture of fried chicken with a sweet and spicy sauce. It’s a popular street food and a staple in many Korean households.

Ingredients:

  • For the Chicken:
    • Chicken drumsticks or thighs, cut into bite-sized pieces
    • All-purpose flour
    • Cornstarch
    • Water
    • Vegetable oil for frying
  • For the Sauce:
    • Gochujang (Korean chili paste)
    • Soy sauce
    • Sugar
    • Garlic, minced
    • Ginger, minced
    • Sesame oil
    • Green onions, chopped

Instructions:

  1. Marinate the Chicken:
    • Marinate the chicken pieces in a mixture of soy sauce, garlic, and ginger for at least 30 minutes.
  2. Coat the Chicken:
    • Mix all-purpose flour, cornstarch, and water to form a batter.
    • Coat the marinated chicken pieces in the batter.
  3. Fry the Chicken:
    • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
    • Fry the battered chicken pieces until golden brown and crispy.
    • Drain the fried chicken on paper towels.
  4. Make the Sauce:
    • In a large skillet or wok, heat a small amount of oil.
    • Add gochujang, soy sauce, sugar, garlic, and ginger. Stir-fry until fragrant.
    • Add a little water to thin the sauce to your desired consistency.
  5. Combine Chicken and Sauce:
    • Add the fried chicken to the sauce and toss to coat evenly.
    • Stir-fry for a few minutes until the chicken is well coated with the sauce.
  6. Serve:
    • Garnish with chopped green onions and sesame seeds.
    • Serve hot with rice or as a snack.

Tips:

  • For a spicier flavor, add more gochujang or red pepper flakes to the sauce.
  • You can adjust the sweetness and spiciness of the sauce to your preference.
  • For a healthier option, you can bake the chicken instead of frying it.
  • Serve with a side of pickled radish (kkakdugi) or kimchi.
