Garlic scapes are the flowering stems of garlic plants. This dish is made by parboiling garlic scapes cut into pieces and then stir-frying them with salt or soy sauce. If opossum shrimp are stir-fried together, the dish tastes and looks better.

Ingredients:

  • 1 bunch of garlic scapes (maneuljjong)
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • Sesame seeds, for garnish

Instructions:

  1. Prepare the garlic scapes:
    • Trim the tough ends of the garlic scapes.
    • Cut the scapes into bite-sized pieces.
  2. Heat the oil:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Stir-fry the garlic scapes:
    • Add the garlic scapes to the hot oil and stir-fry for 2-3 minutes, or until they are tender-crisp.
  4. Add the seasonings:
    • Add the soy sauce, minced garlic, sesame oil, sugar, and salt to the skillet.
    • Stir-fry for another minute, or until the flavors are well combined.
  5. Serve:
    • Garnish with sesame seeds and serve immediately.

Tips:

  • For a spicier dish, add a pinch of red pepper flakes or gochugaru (Korean chili powder).
  • You can adjust the amount of soy sauce and sugar to your taste.
  • Serve this dish with rice or as a side dish to a main course.
