Bibim-Mak-guksu || Spicy Buckwheat Noodles, 拌荞麦凉面, 拌蕎麥麵, 混ぜそば, 비빔막국수 1

Ingredients (Serves 4):

  • Buckwheat noodles: 400g
  • Napa cabbage kimchi: 1/2 head
  • Radish from kimchi: 1/2
  • Cucumber: 1
  • Green onion: 1
  • Beef: 100g
  • Garlic: 4 cloves
  • Sesame oil: 1 tablespoon
  • Sesame seeds: 1 tablespoon
  • Salt
  • Soy sauce

Preparation:

  1. Boil beef: Boil beef in plenty of water until tender.
  2. Prepare vegetables: Roughly chop kimchi. Thinly slice radish. Slice cucumber, sprinkle with salt and let it sit. Chop green onion and garlic.

Cooking Instructions:

  1. Make the broth: Slice the boiled beef. Season the broth with soy sauce and let it cool.
  2. Prepare the toppings: Mix radish with chopped green onion, garlic, sesame oil, and sesame seeds. Mix cucumber with the same seasoning. Season the sliced beef with the same mixture.
  3. Cook noodles: Boil buckwheat noodles until tender, then rinse with cold water.
  4. Serve: Divide noodles into bowls. Top with kimchi, seasoned radish, cucumber, and beef. Pour the cold broth over the noodles.
