Gaori Jorim is a Korean dish made with skate, a type of flatfish. It’s typically braised in a flavorful sauce made with soy sauce, garlic, ginger, and other spices. The result is a tender and savory dish that’s popular in Korean cuisine.
Ingredients:
- 1/2 skate, cleaned
- 2 pieces of ginger
- 2 cloves garlic
- 2 dried red chili peppers
- 2 green onions
- 1 red chili pepper
- A few dried red chili peppers
For the marinade:
- 3 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon cooking wine
- 2 tablespoons water
- 1 tablespoon corn syrup
- Black pepper
Instructions:
- Prepare the ingredients: Cut the skate into large pieces. Slice the green onions diagonally, and cut the red chili pepper into 2cm lengths.
- Make the marinade: In a pan, combine the soy sauce, sugar, cooking wine, water, corn syrup, ginger, garlic, and dried red chili peppers. Simmer over medium heat until the sauce reduces by half. Season with black pepper.
- Marinate the skate: Add the prepared skate pieces to the sauce and coat them evenly.
- Braise the skate: Simmer over medium heat, turning the skate occasionally until it is cooked through and the sauce has thickened.
- Garnish and serve: Garnish with green onions, red chili pepper, and dried red chili peppers.
