Gaori Jjim is a Korean dish featuring steamed skate, a type of flatfish. It’s often seasoned with a simple mixture of soy sauce, garlic, and ginger, resulting in a delicate and flavorful dish.
Ingredients:
- 1 medium-sized skate
- 2 green onions
- 1 red chili pepper
- For the marinade:
- 3 tablespoons soy sauce
- 1 teaspoon red pepper flakes
- 1 tablespoon minced garlic
- 1 tablespoon chopped green onion
- Toasted sesame seeds, black pepper, sesame oil to taste
Instructions:
- Prepare the skate: Clean the skate thoroughly and cut it into serving-sized pieces. Salt the pieces and let them sit for a while to cure.
- Dry the skate: Place the salted skate on a rack and let it dry for 2-3 days until it’s firm and slightly dried.
- Prepare the garnish: Slice the green onions diagonally and the red chili pepper into thin rings. Remove the seeds from the chili pepper.
- Make the marinade: In a bowl, combine the soy sauce, red pepper flakes, minced garlic, and chopped green onion.
- Steam the skate: Place a steamer rack in a pot and add water. Steam the dried skate until it’s almost cooked. Pour the marinade over the skate and let it steam for a few more minutes until the flavors have melded.
- Serve: Transfer the steamed skate to a serving plate and garnish with the sliced green onions and red chili pepper.
