Ingredients:

  • Soybean paste (doenjang)
  • Water
  • Pork belly or other meat (optional)
  • Zucchini
  • Onion
  • Green onion

  • Red pepper paste (gochujang)
  • Red pepper flakes (gochugaru)
  • Soy sauce
  • Sugar

Instructions:

  1. Prepare the ingredients:
    • Cut the pork belly, zucchini, and onion into bite-sized pieces.
    • Mince the garlic and green onion.
  2. Cook the meat:
    • If using meat, sauté it in a pot until browned.
  3. Add the vegetables:
    • Add the zucchini, onion, and garlic to the pot and sauté until softened.
  4. Combine the ingredients:
    • Add the soybean paste, red pepper paste, red pepper flakes, soy sauce, and sugar to the pot.
    • Pour in water to cover the ingredients.
  5. Simmer:
    • Bring the mixture to a boil, then reduce heat and simmer until the flavors are well-combined and the sauce has thickened.
  6. Serve:
    • Serve hot with rice or wrapped in lettuce leaves with other side dishes.

Tips:

  • For a spicier stew, add more red pepper paste and red pepper flakes.
  • You can adjust the thickness of the sauce by adding more or less water.
  • If you don’t have pork belly, you can use other types of meat, such as beef or chicken.
  • You can also add other vegetables, such as mushrooms or carrots, to the stew.
